Actually, that may be more a prediction of the future than a joke today. Perhaps buffalo are the only ruminant appropriate to the great plains. At least there would have to be a radical reduction but _not_ an elimination of beef production worldwide. I don't know enough about the differences between cattle and buffalo to know whether that shift would have to be made.
