interestingly, the thread is titled "on the books and off". it's not
necessarily a choice between national chains and black market labor.
there are small businesses--a single individual, siblings, a couple,
two or three friends--which are also professionalizing services.
the independent professional will charge enough to, most likely, cover
her own expenses (accountant, administrative time, transportation,
advertising) as well as provide for herself things such as health
insurance, disability insurance, retirement savings, and unemployment
insurance. of course, doing so means she has to add at least a third or
more to the black market rates she'd otherwise charge.
