Some spammers include random text in their crap to try and defeat scanners that compare the hash (one-way cryptographic calculation, which provides a "fingerprint") of an email against a known database of spam hashes. Changing a piece of the text changes the hash.
Or possibly the spam is using a non-ASCII character set and your mail client did the best it could to display the characters.
