Not a sweeping history of sports but very illuminating on the subject of college athletics and educational values (The subtitle of the book) is "The Game of Life" by James Shulman & William Bowen. 1900 to today. Covers the issues of sex, finance (capitalism), and culture. I would expect that this book would have information that would make reading it worthwhile.
