its not politically correct, its true! for western-friendly indian food, this book (or related ones listed at the link below) is quite popular:

essentially anything by madhur jaffrey sells well.

for southern (particularly tamil and some telugu/kannada) indian food, meenakshi ammal's "samaithu paar" (cook and see) is *the* bible (warning: this book is not customized for a western audience):
