* Outlook Express (most recent version)
* Outlook 2000 through 2003
* Mozilla Thunderbird
* Yahoo! Web mail
In some cases, such as Yahoo! web mail and Thunderbird, your account can be configured to send all outgoing mail as text. In others, a per message, on-the-fly approach is used (overriding an app's 'decision making' algorithm for determining if and when to use HTML).
Source URLs are listed so full instructions can be browsed at leisure. Excepting the Yahoo! directions which I created just now. Since I have copies of all of these programs running in virtual machines, I would like to have created accompanying screen-shots but time does not permit.

NOTE: Outlook Help states that you can switch message formats after starting an e-mail message, but this doesn't work if you use Word as your e-mail editor, only if you use the internal Outlook mail editor (and then only switch between plain text and HTML formats).
