We certainly get our highest priced caviar there. High price and high quality aren't the same thing. I'd stack US farmed White Sturgeon caviar (abou $60 for a 4oz. jar) against Caspian Osetra ($130 an ounce) almost any day. They sell a Missouri paddlefish caviar locally (they are related to Sturgeon) that is very much like Caspian Sevruga ($100 and ounce) but a bit more mild. $35 for a 4oz. jar. I'm buying a product to actually eat rather than purchasing a class signifier. I prefer the slightly milder flavor as well which is a good thing. Obviously some people may prefer the stronger flavor of Caspian Sevruga. There are flavor differences but labelling one better than the other is kind of meaningless. Are Fuji apples better than Granny Smiths? Wasn't there recently a ban placed on Caspian caviar since the Sturgeon population is in danger of imminent collapse?
