Rheumatic (Rheumatoid) Arthritis is a genetic disease. Grinding wheat does not cause it. My SO has recently been diagnosed with it, as was her mother and older sister. She has not lead the life of a manual laborer. Although she danced and taught ballet from age 5 to 25 it has no bearing on the progression of the disease.
