"glass" made directly from salt still can be dissolved by water. Sodium chloride crystals are used in lasers and so on because of higher refractive index -- either protected from moisture or constantly heated to dry them.

But I take your point: there are lot of industrial products that can be made from salt. Don't know how the demand would match to the amount of byproduct of really massive desalinization.
