Just to be clear: gratuities are allocated to the wait staff, not the 
chef/owner.  It's a little weird to me that you consider depriving wait 
staff of a tip as some sort of protest directed at the chef.  To put it 
bluntly, you screwed over the hard working wait staff here, not the owner.
