There are many scientists who would disagree with you about that. They're called "nothing theorists" and they think about exactly this
question.
I'm currently reading a book written for the layperson (but still rather difficult to understand) on this very subject. It's pretty mindblowing. The basic answer to the question is that nothing is too unstable to exist for long, so that particles would inevitably be created.
