On the first, the buzzwords are "religious identification": http://www.americanreligionsurvey-aris.org/.

On homosex: http://www.gallup.com/poll/108115/Americans-Evenly-Divided-Morality-Homosexuality.aspx. Many others, but Gallup has a good presentation and a longish history.
