Just to make one thing clear, the United Church of Christ in the North has nothing to do with the Churches of Christ in the South. As you note, UCC is Calvinist in origin and runs toward the socially liberal and centrally organized. The CofC (as they sometimes call themselves) is another animal altogether. They are descended from Anabaptists, are very socially/culturally conservative, and very unhierarchical. There is no formal national convention and no formal creed. The national hierarchy, such as it is, exists mainly through the network of Church affiliated colleges (including places like Harding (AR), Abilene Christian (TX), Faulkner (Ala), and the most famous one: Pepperdine (Malibu)).
