i believe there's also a mac utility called textsoap.
if you're using entourage or outlook express in either windows or mac, there's a menu item "rewrap text" that will rewrap all text or selected text. you can also increase or (generally preferably) decrease quoting. unfortunately, i'm in a different program at the moment, so i can't provide menu navigation.
