definitely go see the incredible murals at Coit Tower. Also, a great Diego Rivera in the Stock Exchange.
Also, there is a grass-roots Latino arts organization - I can't remember the name, but probably you can find on the Internet, I think it is on Cesar Chavez Blvd? - that gives out this incredible map of all the (nonfamous) murals in the city, and it is really fun to give yourself a walking tour. I did this once and it was great.
