What makes you think that I use that as a reference.  FYI, I traveled to
more countries than you can count on your digits - not to mention a rather
wide variety of "ethnic" food available in the DC or NYC area.  

Barbecue?  As someone opined, cooks cover their mistakes with ketchup or
gravy.
