I don't know if you know this but the idea of Ho as an escoffier provides inspiration for poets and novelists. See A Good Scent From A Strange Mountain-- by Robert Olen Butler which can be found on-line @ http://www.deanza.edu/faculty/swensson/good_scent.html for an example.
