But what ultimately is Socialism for the 21st century? Wouldn't this also include the ability to allow everyday people to control their own destinies outside of the need for government mediation? To fall into a stateless situation?
Is this merely a pipe dream - even for the long term future?

They want legitimacy in the eyes of the people (Mexican and Venezuelan poor people, for instance) they represent, not those of Western intellectuals. I imagine your average person in a Venezuelan sum does not care about transitioning to socialism or whatever -- he/she wants a higher standard of living.
