Sciences in this context, merely means philosophical studies, or a systematic approach. Somebody who is fluent in German will have to explain the meaning of the term.

I knew he was an astronomer, but didn't know of his mathematical contributions, which amount to an attempted general solution to a cubic equation. The importance in the context of this discussion of the existence of a systematic study, is a proof by demonstration.

Khayyam used his highly articulated sense of pattern recognition to find patterns in sound, words, geometric symmetries and astronomical observations. It was the regularities, or patterns of motion and their calculation that enabled Khayyam (and others) to develop an accurate calendar.

The whole show is worth listening to, but if you are in a rush go to about 5/mins into the 9.40/min segment.

This ability to recognize patterns or symetries, if you will, is very important to develop in sciences like physics, in abstract mathematics, and in various forms of art creation. Music is the most obvious.
