Since you included the original message, I guess that you're looking for something 'other' than your present process.

I'm rather surprised that no one has mentioned iTunes, which seems to me could do all or most of what you want very easily. Import from CD, rename files and add info, create playlists of selected material, and burn to disk. Don't know why you would need to edit files copied from CD, but Audacity is a fine tool.

And with iTunes you could go to the iTunes store to find information about the CDs you are using, to include in your files.
